Avocado on toast is one of my favourite things to eat for breakfast, not only does it taste amazing it also takes zero time to make, which is exactly what you need when you’re in a rush.

This combination of pesto, salty feta cheese and fresh and tangy pomegranate definitely hits the spot!

  • 1 avocado
  • 2 slices of toast
  • 2 tbsp fresh pesto
  • 2 tbsp pomegranate
  • 20g feta cheese, crumbled
  • 1 tsp olive oil, drizzled
  • fresh chives
  • sea salt to taste
  • chili flakes to taste


Toast two slices of bread.

Cut your avocado into thin slices and place equal amounts on both slices of toast.

Sprinkle with crumbled feta cheese, pomegranate, pesto, fresh chives and give it a drizzle of olive oil.

Finish off with a pinch of sea salt and some chili flakes.
