I often get disappointed when ordering the vegetarian burger option at restaurants. You either get a portobello mushroom, a thick slice of halloumi or a dry and tasteless patty, which is the opposite of what I associate with a good burger. What I want is a juicy patty with lots of flavour. Really, how hard can it be?

Turns out it’s not hard. At all.

These crispy bean burgers are packed with flavour and so easy to make. The patty itself is vegan, gluten-free and full of protein. The best part? You only need 10 ingredients, spices included.

    Bean Patties

  • 1 can of mixed beans, rinsed and drained
  • 1 dl /1.2 cups finely chopped roasted peppers
  • 2 finely chopped salad onions
  • 1 minced clove of garlic
  • ½ dl / ¼ cup cornmeal
  • 1 tbsp sesame seeds
  • 1 tsp harissa paste
  • ½ tsp salt
  • ½ tsp mild chili powder
  • ½ tsp cumin

Preheat your oven to 190°C.

Rinse and drain your beans before heating them in the microwave for 1 minute or in a pan until they start to soften.

Place your beans in a large bowl. Add finely chopped salad onions, red peppers, minced garlic, harissa paste, sesame seeds, chili powder, cumin and salt. Using a potato masher or your hands, mash until all beans are crushed and the mixture starts to come together. Add cornmeal and mix until thoroughly combined.

Line your oven tray with a lightly greased baking sheet.

Divide the bean mixture into five evenly sized patties and place them on the baking sheet.

Bake in the oven for 15 minutes on each side, or until firm and golden.

Serve with your favourite toppings!
