When strawberries are in season I can’t get enough of them. In this summer salad, I have paired sweet strawberries with nutritious kale, filling avocado and purple basil (green basil will do just fine). If you haven’t tried the combination of strawberries and basil I strongly suggest you do. Whether it’s in a salad, dessert or a cocktail, the two complement each other perfectly.

Perfect as a side dish or as a light summer lunch. If you want to make it a bit more filling, why not add some quinoa, puy lentils or pan-fried halloumi?

Following a vegan diet? Swap the honey for agave nectar or maple syrup.

  • 1 avocado, diced
  • 8 large strawberries
  • 6 handfuls of kale
  • 1 handful of fresh basil
  • 1/4 fresh lemon, juiced
  • 1 tbsp olive oil
  • ½ dl/0.2 cups of pumpkin seeds
  • 1 tsp honey


Remove the stems from the kale and chop the leaves into smaller pieces before placing them in a big bowl.

Squeeze lemon juice into the bowl and add 1 tbsp of olive oil to the mixture. Use both of your hands to massage the kale until it softens.

Place the kale on a serving platter and top with diced avocado, strawberries, shredded basil, crunchy pumpkin seeds and a drizzle of honey.
