- 1 avocado, diced
- 8 large strawberries
- 6 handfuls of kale
- 1 handful of fresh basil
- 1/4 fresh lemon, juiced
- 1 tbsp olive oil
- ½ dl/0.2 cups of pumpkin seeds
- 1 tsp honey
Remove the stems from the kale and chop the leaves into smaller pieces before placing them in a big bowl.
Squeeze lemon juice into the bowl and add 1 tbsp of olive oil to the mixture. Use both of your hands to massage the kale until it softens.
Place the kale on a serving platter and top with diced avocado, strawberries, shredded basil, crunchy pumpkin seeds and a drizzle of honey.
