About Recipe

I have always had a thing for smashed avocado on toast (well, avocado on anything really), but my obsession truly kicked-off during my time in Australia – the home of smashed avocado on toast! Since then I have experimented with many different versions of the dish but this is by far my favourite combination to date. It’s super easy, quick to make and incredibly satisfying.

You can’t go wrong with this, simply the best way to start your day!

If you like this smashed avocado recipe and love avocado on toast like me, then I recommend you give some of my others a go. One that’s quite similar but has a little wow factor is my avocado on toast with pesto, feta and pomegranate recipe.

If you try either, be sure to let me know what you think!

  • 1 dl/0.4 cups pomegranate seeds

  • 75g feta cheese

  • 10 fresh mint leaves

  • 2 avocados

  • 2 thinly sliced radishes

  • 6 sliced cherry tomatoes

  • chilli flakes – to taste

  • olive oil

  • 1 lemon

  • sea salt – to taste

  • 2 slices of bread – sourdough, multigrain, gluten free

Start by mashing up your avocados in a small bowl and season with sea salt (salt bae style!) to taste.

Thinly slice the mint leaves and add to the avocado mixture.

Slice and toast your bread.

Spread the avocado mixture across your toast and top with crumbled feta cheese, thinly sliced radishes, cherry tomatoes, pomegranate seeds, chili flakes, a squeeze of lemon juice and a drizzle of olive oil.

Liscus tippoached, scrambled, fried or boiled eggs are a great addition to this meal if you’re looking for a protein boost
