Squeezing out the last bit of summer with this delicious feta quinoa salad with strawberries, proving once again that less is indeed more.

It’s funny how we always seem to think that we need more flavour, more ingredients, more of everything really. When you’re using good quality ingredients there’s really no need to complicate things. My recent trip to Italy reminded me of how true that statement is.

Instead of adding everything they have in the kitchen, the Italians select a few, good quality, ingredients and let them shine. Bruschetta is a brilliant example of this, or cacio de pepe (pasta with cheese and pepper). Both dishes taste like heaven but can be created with very few ingredients.

This simple feta quinoa salad is another great example of why more isn’t always better. It packs a suprising amount of flavour and is incredibly filling. Perfect to serve as a side dish or just on its own.

This recipe will feed four people as a side dish or two people as a main.

ingredients

  • 250g cooked quinoa
  • 1 zucchini
  • 200g strawberries
  • 100g feta cheese
  • 3 handfuls of rocket salad
  • Extra virgin olive oil
  • Sea salt to taste

Directions

Cook the quinoa according to the instructions on the packet.

Cut the zucchini into small, dice size, pieces. Pan fry until golden.

Place the cooked quinoa in a large bowl. Top with rocket salad, zucchini, chopped strawberries and crumbled feta cheese. Drizzle with good quality olive oil and sprinkle with sea salt.
