- 3 dl/1.2 cups of flour
- 2 tsp baking powder
- 2 tsp vanilla essence
- 1 pinch of salt
- 1 pinch of cinnamon
- 2.5 dl/1 cup of milk
- 0.5 dl/0.2 cups of yoghurt – this can be replaced with milk
- 3 eggs
- 5 sliced strawberries
- a handful of blueberries
- 1 sliced banana
- maple syrup
- icing sugar
- salted butter
For the pan:
Start by pouring the milk and yogurt into a large bowl.
Sift your flour into the milk mixture and add salt, cinnamon, vanilla essence and baking powder.
Whisk the batter until it’s lump-free and then add the eggs.
Once you have a smooth batter you can let the mixture rest whilst chopping up your toppings.
Heat up a small pan and add butter for frying.
When your pan has reached medium heat, you can add a scoop of pancake batter.
The pancake should be flipped over when you start seeing little bubbles on the top.
Once all pancakes are cooked you can top them with berries, dust them with icing sugar and drown them in delicious maple syrup.
